These caper berries are selected by hand and then prepared to be stored in a brine of water and vinegar. Capers are not eaten fresh, but preserved. Fresh capers can smell unpleasant because of the capric acid present. In combination with salt water or vinegar, the taste of capers is fresh and sour.
Capers are derived from a shrub-shaped plant with branches that grow widely and can grow up to 1 meter long. Capers are the unopened flower buds of the caper plant. The plant occurs in the wild on rock faces in countries around the Mediterranean Sea with a Mediterranean climate.
