Busiate are a type of long macaroni, originally from Sicily. Because of its hollow center, this pasta is the perfect choice for any kind of sauce (like one of ours).
Produced by an ancient pasta factory in Tuscany. The drying process in cold storage rooms takes 36 hours at a low temperature. Due to the lower temperature the drying takes considerably longer than at high temperature (often seen with mass production), but the main advantage is that hereby the pasta maintains its intrinsic taste and nutritious properties.
