Preparation
• add 1 liter of boiling water or broth, and 4 tablespoons of extra virgin olive oil, and salt to taste
• cook for 16/18 minutes over medium heat, stirring occasionally
• when the water is absorbed, the risotto is ready (al dente)
• if you prefer the rice to be more cooked : add more hot water, a little at a time
• remove from the heat and optionally mix with grated Parmesan and a knob of butter before serving.
